Plant Based Strawberry Parfait

Strawberries are in season in Ontario from mid June to late July. This is the only time in the year when you can have delicious fresh local strawberries! If you really want freshness and maximum nutrition get your strawberries directly from your farmer. The farmers will usually pick their fruit either the day before or the morning of the market. Don't forget to ask if they are free of pesticides. I love strawberries and will be sharing a few different recipes to inspire you this season.

Plant Based Strawberry Parfait


1 cup raw cashews

1 tbsp flaxseeds

1/2 tbsp raw honey or maple syrup

1/4 tsp vanilla extract

Start by soaking the cashews overnight in water with 1/2 tsp of salt added to the water. The next morning discard the soaking water and rinse cashews. Blend cashews with 3/4 cup of water + vanilla + honey or maple syrup. Blend until you reach a creamy texture. Grind flaxseed separately.

Choose a container and build your parfait by layering cut up strawberries and cream. Top it up with ground flaxseeds and fresh mint. It makes a perfect summer day breakfast.
